Super Duper Low Calorie Buckwheat Pancakes

Happy Saturday folks!

I made some buckwheat pancakes this morning for the first time in my life.
I added way, way, way too much salt but otherwise they were perfect!
Here is a shot of the final product,
but wait till you see what I started with.

They call these buckwheat groats.
(I know where do they come up with these names.)
I buy these organic at our local coop.
This is what they look like in grain form.

This is a "kitchen mill".
Something my momma is borrowing me.
I can make flour from all kinds of grains with this thing.
Its very, very loud and startles the entire household when I turn it on because is sounds similar to walking outside and being blasted by a hurricane.
Seriously, its really loud and sometimes fun to scare
the kids who might be walking nearby when I turn it on.
Ha, Ha, just kidding, I wouldnt do a thing like that, would I?
But its amazing how THAT (above)

It looks just like white flour.
Ive ground up spelt and made spelt bread.
Ive ground up millet and made millet meal (kind of like malt-o-meal)
and have also put it into bread.
The kitchen mill has opened up a whole new world for me and has me excited about the healthy food possibilities with using different types of grain.
Freshly ground grain is much better for you,
and, gosh, its so easy to grind it up.

So, I took a recipe off a box of buckwheat in the store and modified it to make it "clean", although Im still not sure if baking powder is clean...same with corn starch.
Here it is:
1 cup of buckwheat
1 tsp of corn starch
4 tsp of baking powder
1 tsp of salt (no, no, please dont do this use 1/4 tsp of salt)
1 egg beaten
3/4 cup of water
2 tsp of olive oil

The batter had kind of a pasty texture to it.

It was thick and poured slowly.

And the pancakes look substantial dont they?
I was able to make 11 1/4 pancakes with a double batch.
"Lord, help me.

Thats it.
Plus I was stuffed.
They were very filling.
And Im sure it would have tasted wonderful if it didnt taste like I was licking a salt lick.
(Cows use salt licks. They are big blocks of salt.
Hey, dont make fun. I know Im producing milk, but Im not a bovine.)
So, next time I make these...I will use much less salt.
But Im really curious about making some spelt pancakes,
or millet or some other grain out there.
Didnt I tell you that my diet this time around would be fun?
So, my breakfast this morning was:
2 pancakes-140, 4 tsp of peanut butter-133,
1 small bacon slice-25, 2 large eggs-140,
and 1/2 a glass of orange juice-55=493
I took a day off from working out, although I still might do some push-ups.
My calories so far today are 1,353.

Oh, I forgot to add that I lost another pound this morning,
so thats five pounds lost in five days.
