I couldnt wait until next weekend to try making spelt pancakes. The buckwheat pancakes that I made yesterday were just too much fun, and I knew these might taste even better.

But heres what I began with...organic spelt grain.

I looked at a couple recipes on google and then just made it the way I wanted to.
The spelt grain is a higher calorie grain than buckwheat, so I cut down on the olive oil to try to keep the calories in line. I also never add the milk or sugar. Its amazing. You can make pancakes out of just about anything. This recipe made seven pancakes.
This is the recipe:
1 cup of spelt flour (which is 1/2 cup of grain )
2 teaspoons of baking powder
1 teaspoon of cinnamon
1 egg
1 teaspoon of olive oil
1/4 teaspoon of salt
3/4 cup of water
The batter was a little runny but poured fine.

It tasted AWESOME!
Each cake was 80 calories.
I was feeling stuffed about half way through the third cake.
I added one teaspoon of natural peanut butter.
With three pancakes, the peanut butter and two large eggs,

Anyway, its almost Monday.
I actually gained 8/10 a pound this morning
so now Im back to losing four pounds in six days.
I was thinking the gain may have come because of those
silly "too-salty" buckwheat pancakes that I made yesterday.
Or I may not have gotten in enough water.
This is my second day in a row of rest.
I should be a-rarin to go to the gym this week.
