Five Minute Post

Hi there!

I have literally five minutes here. I finally just now read your comments tonight. This no Internet thing is weird. Im definitely missing it.

Know what Ive recently started to enjoy? Reading our encyclopedias at night. I found some amazing history on the discovery of Antarctica. Ha!

Well...I have been super busy with all kinds of stuff. I did see an 8.8 pound loss total on Saturday and then again the same today. So, maybe were trending toward nine pounds loss. I hate how slow its taking.

Im so glad you tried those carob bars, Sunshine Meg. I gave some to my sister yesterday and she loved them.

I also (with the aid of Daddy Rainmaker) designed a work-out program for my sister that I shall have to share with you all. Its for three days a week and takes about 20 to 25 minutes. Its a weight training program.

Im not sure when I can blog again. There is a lot going on this week.

A Blah Post

Hello friends!

Well, Its been a few weeks since I last left a post so I thought I should update. I stayed on my clean diet for two weeks, but the last few days Ive been slightly off so I can tell Im not feeling as good as I could.

I also found out that I have low iron, which would explain why even though I get lots of sleep each night 8 to 10 hours, I dont have a lot of motivation the way I did in my last pregnancy when all I wanted to do was organize the house. So, very soon Im going to try some iron supplements along with some kind of stool softener because those supplements will bind you up.

And while Im at it, I suppose I could mention a few other woes that Ive experienced in the last two weeks. Well, about two weeks ago, I put my back out. So it hurt to walk, stand and even lay down sometimes. You know those power operated shopping carts like golf carts? It was hurting so bad, my husband actually talked me in to using one of those at the grocery store. It was funny, but I felt much better sitting on that than standing. I feel better now.

Then about ten days ago, I got sick with the stomach flu. I was vomiting and had diarrhea. After about 15 hours of that, I was getting dizzy. So, we went to the hospital for a liter of IV fluid to rehydrate me. I felt like a new woman after that IV. An hour after that, I could actually eat, whereas before I couldnt even keep down water and was throwing up bile. I would encourage anyone to do that if theyre dehydrated.

Seems like a lot of people I talk to have been sick lately with the stomach flu.

It was so nice to see SunshineMegs new little baby girl. Right now it feels like 14 weeks is a long time to wait for our baby girl, so it was encouraging to see hers. Congratulations SunshineMeg!

So, this is kind of a blah post, but Im generally busy homeschooling throughout the day and then Monday through Thursday there is some extracurricular activity that the kids are involved in in the evening. I started homeschooling early this year so that when the baby comes May 7th, I can be off for a few months. I can see that it will be a challenge for me to be as prepared for this baby as I was for Morning Glory when I had the whole summer to prepare. So, Im really hoping that taking iron will help my motivation. They say it takes several weeks though before your body absorbs enough iron for you to notice a difference. The last time I took iron supplements was 17 years ago and I stopped because of the side effects. So, well see how this goes.

Two Days And Counting This Is The Happy Post

Hi folks,

In case you missed it, I just posted the "mad" post just below this "happy post".

Balance is good during pregnancy right? Especially at the end?

So, in this post, Im smiling for you because I just got back from a wonderful time at church. Worship was great and Im only two days away from being due.

So, I had my daughter snap some more pictures for you.

I can just sling it over my back like a pregnant model...

We did get out on a date last night, which was really nice.

Oh, I voted on Friday so in case anything happens on election day, Im covered.
And...we took the kids trick-or-treating tonight.

A Ten Minute Post

Hello friends!

Well, Ive stopped walking by the computer and looking longingly at it. Its been about two weeks with no internet at home and I think I just may be getting used to not having it.

I hit a 10.4 pound loss on Sunday morning and then fluctuated to a 9.6 pound loss today. So, the trend continues to be continued weight loss. Im not on track for losing 20 pounds in ten weeks, though. I simply cant expect to lose it at the rate that I did last time when Im taking in more calories. But, I need those extra calories for Morning Glory.

The last time that I lost 20 pounds in 10 weeks I was not breastfeeding. hmm...but I feel good about attacking another ten pounds and I yearn for the day when spring arrives and Im looking closer to the way I want to look.

You guys are so kind to leave me comments when I cannot be around to respond to them.

But just think...this is the last week of February....after March its all spring baby...sure there may be some "cool-ish" days but it means longer days...warmer on-coming weather...

This is the time folks where we have to buckle down and press into our goals. By the middle of April or the start of May...several weeks from now...we can get a lot of good fat loss in and a lot of toning, so that by the time that warm weather hits, we are feeling and looking good.

All you winter weather folks, were almost there! Spring is in sight...were almost through the worst of winter. Hang in there! You can do it!

I hope to get in to blog again soon. Maybe Thursday or Saturday!

A Saturday Post

Hola compadres!

Its Saturday and snowing here in La Crosse, Wi. Superbowl paraphernalia is still being sold. Some really nice stuff too.

Its sure feels different writing my blog at the library on a Saturday than it does doing it in the comfort of my own home...usually at night. Im actually kind of missing it. I feel like it affects my dietary focus a little. I actually ate some sugar and white flour last night.

As much as I love Morning Glory...I feel annoyed and a little down at how slowly the weight is dropping. So, this weekend, Id like to pick up some Fenu Greek, which is a natural supplement that helps increase breast milk production. Id like to start counting calories again. I havent been in the last few weeks. Im also looking at the calendar and making plans to prepare to run in a half marathon race in about eight weeks. Having an athletic goal for me to prepare for has always helped me to lose weight.

I still am weight lifting four to five days a week. I usually run five to six days a week, but while training for the half marathon, my mileage will increase.

I plan also to try and phase out caffeine in the next four weeks so that I can more easily take in that eight to ten cups of water a day that I need to not only facilitate weight loss but insure that Morning Glory gets his milk. I also feel that caffeine makes me more tired in the long run. No caffeine will make sure that Morning Glory isnt staying up later at night than he should be, which will help me get to sleep earlier, thus giving me more energy for everything that I do during the day.

I talked to my sister who has been off caffeine for three months and she has noticed that she is "happy" when she gets up in the morning. I want that too, friends!

This morning I weighed in at about a nine pound loss. By next Saturday...Im hoping for an eleven pound loss. Well see!!

This morning, Morning Glory weighed 13.6 pounds. So his weight has increased by 6/10 a pound since two weeks ago.

There is a way for me to get pictures to my blog, but I just havent gotten my act together enough to make it happen. Ive also thought about keeping a written "blog diary" during the week and then publishing it when I have the chance to get on line because I really do enjoy conveying my thoughts into words.

Brown Butter Whole Wheat Chocolate Chip Oatmeal Cookies Post it sized messages

Husband - even when you make me nuts, Im glad its you who makes me crazy.

This June, Husband and I will celebrate 12 years of marriage, and this October, well celebrate 19 years of being together.  19 years is almost half my life, and its a good chunk of time to spend with another person.  I left Parents home at age 18 and never went back, so in some ways, Ive been with Husband longer than my own parents.

This means, ahem, that we have our fights, our disagreements, our squabbles.  I accept that in any relationship, conflict and tension is par for the course, and that usually, such fights blow over.  I liken the tempers in the house to tropical storms that often are ferocious, but once over, the skies are blue and clear.

Id say that Husband and I have pretty open communication, and although Im not a "yes" wife, Im a nice wife.  I think Husband wishes I were much more of a yes wife, but hey - thats just not where I am.  Hes not a "yes" husband either, so lets just say that opportunities for mini explosions are there.

Most recently Husband has been miffed because of my continual refusal to use this cheap bolt on the front door.  We have a sturdy deadbolt (which is difficult to break in demonstrated by the lock smith who failed to open both my garage and front doors) and above that is a simple slide lock that we installed when the kids were young so that they couldnt just fling the door open.  Its still high enough that even Daughter #1 cant reach it yet.  Ive always thought of it as a way to prevent the kids from getting out and not as a way to deter people from coming in, as its not Fort Knox strong.

However, Husband insists that it needs to be bolted and time and time again, Ive forgotten/failed to slide the upper lock and this is majorly frustrating to Husband. Upon his return from work, hell walk over to the front door, see that its not bolted and come and find me and ask, "Did you see the front door lock?"

"Yeah, I locked it of course."

"BUT NOT THE TOP!  Why cant you bolt the top?"

Instead of being the good wife and saying, "Okay.  Ill try harder to remember to bolt it next time" my response continues to be, "Thats not the important one to lock. Its not going to keep anyone out."

Husband generally throws his hands up in the air and stomps off frustrated at his lack of a "yes" wife.  I know, I should, but now its become more of a way for me to torture the Husband at his expense.

Yesterday, Husband came home, noticed the unlatched top slide and called from the foyer that I hadnt slid it into place, to which I responded, "Okay okay, Ill try and remember," while keeping my fingers crossed.  However, when I went up to bed, I noticed something stuck to the door and went over to investigate.  On the door, near the lock was a small yellow post it with the words, "Lock me plz."

At first I was stunned.  A POST IT WITH INSTRUCTIONS?  However, I didnt respond, and merely went upstairs and didnt comment to husband.  Today, however, I carefully thought of what my response should be.  Clearly the doorlock is the single most annoying thing that I do, so I needed to find the single most annoying thing Husband does.  Believe me, the list was extremely long, but I wanted to keep things short and sweet.  I decided to put a post it, on the bed, and it said, "Dont eat here please."  (Husbands desire to snack in the bed has made me completely bonkers.  I cant stand it.)

Today, Husband came home from work, and I heard him bellow again about the front door "WHY ISNT IT LOCKED?  Didnt YOU SEE THE NOTE?"  I heard him go upstairs, and then I went upstairs as well and then I heard, "YOU THINK YOU ARE SO FUNNY, dont you?"

Well, ahem.  Yes I do.  Snort.

Smaller than a post-it note, with more of a message than a post-it note, with a longer lasting effect than a post-it note, are these cookies.  I basically took the Brown Butter Cranberry Cookies and switched out the cranberries for chocolate chips to see what Id get.  What I got was way better than a post it sized message. Packed with flavor, not too sweet, with complex notes and a crispy finish - these cookies are yummy.  I love the oat texture, the flax seed interest, and the chocolate richness.  Perhaps if Husband had taped one of these to the door, hed get a "yes" wife.  Im sure I wont be putting these in the bed however. Thatd just defeat the purpose of my own note.

Brown Butter Whole Wheat Oatmeal Chocolate Chip Cookies
Makes 5 dozen

Ingredients
1 cup all purpose flour
1 cup whole wheat flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon
1 cup (2 sticks) butter cut into pieces - either melt and turned into brown butter or room temperature butter
1 cup light brown sugar
½ cup white sugar
2 large eggs
2 teaspoons vanilla extract
2 cups old-fashioned oats
2 cups semi-sweet chocolate chips (you can also try dark choocolate or bittersweet chips)
¼ cup ground flax seeds (optional)

Method
Preheat oven to 350.

Make brown butter if desired.  Heat a heavy pot or skillet over medium heat and add butter pieces.  Whisk frequently to ensure even melting of the butter. After about 5 to 6 minutes of melting, the butter will foam up and subside.  At this point, watch the butter carefully to see if the bottom of the pan is becoming covered in brown specks and the color of the butter has turned from yellow to warm brown.  The difference between brown butter and burnt butter (which is used in other recipes) is about 15 seconds.  Set aside and allow to cool for 30 minutes.

Whisk both flours, baking powder, baking soda, salt, cinnamon in another bowl set aside.

Using an electric mixer, beat brown butter (or regular butter) and brown and white sugars until light and creamy.  Add eggs one at a time, scraping down sides of bowl and beating well after each addition.  Add vanilla extract and beat again.

Reduce speed to low and add flour mixture, carefully so that flour gets mixed into dough.  When flour is just mixed, add oats, chocolate chips, and flax seeds.

Using a tablespoon measure, scoop out dough, separating them 2 inches apart on a parchment lined cookie sheet.  Press down balls of cookie dough to help spreading process.  Bake for 15 to 18 minutes until golden brown.  Transfer to wire rack and let cool.
