Lemon Yogurt Cake When you have a little fan

For my youngest fan, JK, I know that your dreams will come true!

I hear it every so often.  "I read your blog."  "I love your blog."  "I really love your stories."  Its not every day, but its often enough that I feel reasonably reassured that out there, in the wide, wide world, I have a few fans.  Its especially reassuring considering that no one in my home reads my blog or enjoys my food.  My daily cooking is often met with groans, words like "Not THAT again" and "Why dont we ever eat out?"  My fans out there in cyber space are what keep my kitchen running like an old engine in need of an oil change.

However, my official tune-up to becoming a well-oiled old engine, came in the form of a 7-year-old daughter of a friend.  This young lady dreams of being a TV chef.  Her days are filled with visions of becoming a Food Network star, and she daily practices her TV cooking show.  Shes organized, methodical and an expert baker.  The craziest thing of all is that she counts me as one of her cooking idols.  I have a series of 4 cooking videos on Grokker, and she watches them repeatedly, often imitating the way I say a line, or asking rhetorical questions to my face on the screen that she knows will be answered soon after.  She is, truly, my biggest fan.  She asks her mom to make the recipes that I make and she begs her mom to watch me on Grokker.  She pulls up recipes from my blog to study and when she comes over, I see her shyly glancing my way, almost like one would with a star in the house.  She repeatedly asks her mom HOW we met (high school over 20 years ago) and how we are still friends after all this time.

So for you, JK,  my young apprentice from afar, I give you this recipe of lemon cake.  You tasted it, loved it and I told you it was the perfect recipe for you to make this weekend.  Its easy - no mixer required and all you need to do is have two bowls at the ready so that you can mix a bowl of wet ingredients and a bowl of dry ingredients.  It just so happens that your mom also likes it, so soon you can be the expert at making this lemon cake as well.

Lemon Yogurt Cake
(adapted from Ina Garten’s Barefoot Contessa At Home)
Makes 1 loaf, enough for 8 people

Ingredients for Cake
1 ½  cups all-purpose flour
2 teaspoons baking powder
½  teaspoon kosher salt
1 cup plain whole-milk yogurt
1 cup sugar
3 extra-large eggs
½  cup vegetable oil
1 tablespoon grated lemon zest (2 to 3 lemons, and you’ll use the juice later)
½  teaspoon pure vanilla extract

Method
Preheat the oven to 350 degrees F. Grease an 8 1/2 by 4 1/4 by 2 1/2-inch loaf pan. Line the bottom with parchment paper.

Whisk  together the flour, baking powder, and salt into 1 bowl. In another larger bowl, whisk together the yogurt, sugar, eggs, oil, lemon zest, and vanilla. Slowly whisk the dry ingredients into the wet ingredients,  making sure its all incorporated. Pour the batter into the prepared pan and bake for about 50 minutes, or until a cake tester placed in the center of the loaf comes out clean.

While cake is baking, make soaking syrup.

Ingredients for Syrup
? cup granulated sugar
? cup lemon juice (from the lemons zested)

Method
Cook the 1/3 cup lemon juice and remaining 1/3 cup sugar in a small pan until the sugar dissolves and the mixture is clear. Set aside.

When the cake is done, allow it to cool in the pan for 10 minutes. Carefully place on a baking rack over a sheet pan. While the cake is still warm, pour the lemon-sugar mixture over the cake and allow it to soak in. Cool.

A Little Update And Some Home Made Soup

Good evening friends!
How was everyones Tuesday?

It was a very productive day. Four more loaves of bread were made (thanks, Darling Rose), a double batch of cornmeal muffins (thanks again DR), this home style chicken noodle soup and some biscuits that our 15-year-old daughter made as well.
This is the first time I made the soup this way. I used some home made whole wheat noodles that had been sitting in the freezer for like two months. I also used a bag of chicken that had been sitting in their for a few months too. I added my broth, onions, carrots and canned corn...and it was unbelievable!
Everyone loved it!!
My daughter cooked up some biscuits. These actually use white flour, but they look wheat because we ran out of white and had to knead it in wheat flour.
So, those are my two pictures for today.
Now for the update with my maternity appointment.
When I met with this midwife this morning, I got to talking to her about her kids and forgot to ask her some questions. Also, she did not do a physical exam to see if I was dilated, if my cervix was softer ect.. So, after I got home I felt annoyed with myself for forgetting my questions and not asking to be examined. I told my husband about my frustration. So, he suggested I just call her back and ask her those questions. So, I called back, got some really good answers AND set another appointment for this Thursday to have a physical exam.
Lets be real here.
Ive got less than two weeks now before my due date and I dont want to have to wait another whole week to see if Im even dilated. I would be just too annoyed with myself for the next seven days.
But what I do now know...
She thinks the baby weighs around 6 1/2 pounds. My abdomen measured 38 centimeters as compared to last week where I measured 36 centimeters. So, my abdomen measurements now match the weeks along that I am.
Remember those stomach pains? Well, I asked if there were any side effects to taking Evening Primrose Oil tablets. The side affects can be that if you take too much: "nausea, vomiting and GI distress".
You know what GI distress is, dont you? Gastro intestinal distress. I would heartily describe my stomach pains as GI distress. One of the directions for taking those evening primrose tablets is to take it with food. So, there must be something in it that can affect my stomach. What I do now is to just take two tablets a day instead of three. I havent had any pains in the last two days.
See?! I didnt need the GasX! Ha, Ha!!!
There didnt seem to be any adverse affects from the raspberry lea tea extract.
Oh, I was leaving the clinic this morning from my appointment and in the elevator, when a gal with a newborn stepped in too. Her little baby girl had just been born on Friday, the 15th, a month early. It was her first baby. I asked to see her; this little girl looked so precious and delicate. Perfect little fingers, nose, and mouth. My heart just swelled with the joy and anticipation of soon being able to see our baby boy too.
The mama said she was on her way out to go shopping for her baby.
In the meantime, with all the cooking, I did stumble on my diet again today. I actually had a slice of white bread with some home made strawberry jelly. And I had a small biscuit. And then I had a small coffee with sugar and cream.
So, its back to a new day tomorrow.

Learning Little Lessons Every Day

Hi there folks!

Two weeks have gone by since I started my diet and Im at about the same loss as I was at day two when I last blogged.

Pathetic, I know.

But not really. You see, I have been trying to lose weight and watch what I eat, but I have been encountering eating and working out obstacles that I have been working through. For some reason, it is just taking me longer to get going and to hold onto my focus.

So, although I have not lost a significant amount of weight, I have gained more knowledge on what will and will not work for me for where Im at in my life right now.

What have I learned you ask?

Excellent question!

Well, Ive learned that "winging it" at the family birthday party will not work in the whole scheme of weight loss. Key lime pie, home made lemon bars and chips really do add up. Actually, this something that I already knew, but just needed to be reminded of.

When it comes to social eating...at this point in the game, I just cant trust myself to be let loose at the local picnic without a plan. Those home made chocolate chip cookies and scotcheroos...no matter how small theyre cut, are just too tempting. And, in the end, just add up to be too many calories.

Another thing Ive learned.... I wont hit that two pound a week weight loss average unless Im working out. You see...for various reasons, I did not work out last week. I counted calories and for the most part maintained...but for the results that I want to see...I need to be hitting the gym with more consistency and fervor.

As I recall, losing weight and looking great arent for the faint of heart. But if my memory serves me right, it can be done by doing the little steps. Starting out with short runs. Weight lifting on lighter weights until I can do things that are more challenging. Writing down my calories even if Im embarrassed by what I ate.

And most of all, not giving up because of my mistakes but instead learning from them.

Oh, and then theres that new little difference. I cant get to the computer every day or apparently every week for that matter to write about my progress. But I do have my home made journal which is what I have always successfully used in the past.

A Little Update

Hello again!

Thank you for all of your congratulations!

Im at the library with baby this time and hes asleep. I had stopped in to pick up the latest Jack Reacher novel, and I thought, "well, well see how long he sleeps."

He just got weighed again today and hes now 6 pounds 11 ounces, as compared to 6 pounds 6.8 ounces on Monday. Im guessing that he will hit seven pounds very soon.

I dont know how the weather is anywhere else, but its been in the 70s here for the past three days which has been wonderful for Daddy Rainmaker to get some outside things done at home.

I have been doing some house cleaning and around 7:00 p.m. last night I hit the wall and fell asleep for four hours. But Ive been working hard to make sure I get my sleep. Each day I feel a little bit better recovery-wise. Im also very glad that we made all that food because meals are a breeze.

Tomorrow and Friday I start back with some homeschooling, so well see how that goes. Also, I am thinking about going back in the gym next week, but that will depend on how I feel.

The whole family just loves baby and loves holding him. I dont even mind changing his diaper. Well, I think hes waking up.

I will blog when I can.

My Little Mess up

Hola compadres!

A little Friday post here! Im on my way to get in a long bike ride this afternoon and them maybe later slip to the gym.

But I might as well admit now that I snuck into my husbands stash of chocolate chip cookie dough ice cream this afternoon and had a good 3/4 cup worth of it. He got it from the same place that I get my awesome home made chocolate turtles.

I should have just ate my turtle...but I didnt know ahead of time that I would eat that much.

Ay carumba!

But its ok. Ill just burn it off with this sweaty, hot six or seven or ten mile bike ride. Not sure how far away it is that Im going.

Other than that, my diet is going perfect. I dropped 2/10 a pound today. You just wait, one of these next three days (provided I stay on my diet) about two pounds are going to drop.

Nothing Like A Little False Labor

Hello, good evening!

My contractions stopped around 5:00 p.m. tonight. But that was a few hours after I lost part of my mucus plug. I say part because I dont know if that was all of it or not, but I do know that it was at least part of it.

Anytime that has happened, I have been in the hospital two to four hours later with every single one of my births. So why my contractions stopped, I dont know. Its just like I said, every labor is different and this is proving to be no exception.

I dont mean to gross anyone out, but for those who dont know, basically the mucus plug stays at the opening of the cervix separating the baby from the outside world. The only reason you would lose your mucus plug is because your cervix is becoming more dilated. So, I can only assume that Im perhaps more dilated than when I was this morning.

Ive never been the mama who hangs out for days at a time dilated at 3 or 4 centimeters. Im usually going into the delivery room if I hit those numbers. So, the fact that Im not in yet does strike me as strange.

But after it became obvious tonight that the contractions had stopped, I felt irritated, annoyed and tired. So, I just laid down to take a nap. I felt better afterward. Then, since there were no contractions still, I went to the gym to get in a back and biceps work-out. So, now I have two of my three work-outs in this week.

Oh, and I didnt do any bouncy cardio because I didnt have time. Maybe tomorrow.

But, the good thing out of all of this is that I got everything packed up. Packing took longer than I expected it too. It was fun to pick out our sons outfits for what he is going to wear when he comes home and what he will wear for his hospital pictures.

I also had to clean out his bassinet because I had thrown some other things in it.

My parents are on stand by, but I think they may be out of town all day tomorrow. So, hopefully our little baby waits to come until Thursday.

Wouldnt it be fun to have him on "Happy Thursday"?

Here I go making it sound like a tea party again.

Well, Im going to get some more rest. If anything happens, Id like to try and post before going into the hospital unless, of course, it happens too fast for that.

Homemade Microwave Popcorn Feeding many with little

Because I work with young writers right after their school day, they more often than not show up to my house HUNGRY.  Some think about a snack and their moms provide them with something but a vast majority of them rush here from school and havent eaten anything since their lunch.

As one of my students says, "Im always hungry."

I get hit with the ravenous appetite of teenagers daily and I know that expecting them to push through an hour of grueling writing and drills isnt easy on an empty stomach.  So I have to give them something - something inexpensive, easy to make, and easy to eat while they are working.

Ive discovered that popcorn (aside from the insane mess it leaves underneath my table in my classroom) is a great snack for the kids.  Its filling, not so fattening, easy to eat while writing and doesnt break my piggy bank.  I can feed a lot of kids with a single bag and they all love it.

And Ive discovered the BEST way to make popcorn - and its in the microwave.  Im not talking the bags you pick up from the grocery store (read the label of those bags - youre consuming a lot of extra stuff that is unnecessary) but a bag that you fill with popcorn kernels, oil, and salt and stick in your microwave.  I can pop about 1/2 cup of popcorn and yield about 4 cups in under 3 minutes.  Its the most wonderful thing ever, and Ive even taught some of my students how to make it so they can go home and do it themselves.  The flavor is really wonderful as well and the texture is crisp and light.

Best of all?  No big pans to clean and nothing to wash except for salty fingertips.


Homemade Microwave Popcorn

Ingredients
½ cup popping corn kernels
2 teaspoons vegetable oil
½ teaspoon salt
1 large lunch bag

Method
Into your lunch bag, place corn kernels, vegetable oil and salt.  Fold over top of bag and give a vigorous shake so that all kernels get a bit of oil and salt.

Fold over top of lunch bag twice and place lying down in microwave.  Set your microwave to cook the popcorn (mine cooks the whole bag in 2 minutes 15 seconds but individual microwaves vary.)  Start with 3 minutes, and when popping sounds reduce to less than 1 every 3 seconds, shut off microwave.

Carefully open bag (it is HOT) and enjoy!  Add more salt if desired or other special seasonings. You can even make the popcorn mix with this method.

Be careful - some lunchbags may not be large enough for the ½ cup amount and you’ll end up with a mess like I did.  Reduce your popcorn amount to ? cup and you’ll be fine.

Losing A Little More

Hello friends!

I posted a 10.6 pound loss this morning. Im still hoping to see an 11 pound loss by the end of the week. Ive been running more in preparation for a half marathon in eight weeks. I think that may help.

Also I started taking Fenu Greek this week and and do think it may be helping me with producing more breast milk for Morning Glory. I continue to lift weights four to five days a week. Last week I got in five days. I posted a six mile run on Sunday and will probably try to hit a seven or eight miler this weekend.
